Breaking News: I have found the holy grail dairy-free (vegan really) box mac n cheese!! If you've been following along, you'll know that I was obsessed with blue box mac n cheese before finding out I'm allergic to milk proteins back in 2013, and have tried tons of different dairy-free box mac n cheese variations that were all awful, like this one. I have made some from scratch by melting daiya cheese, but it's just not the same as boxed. Anyway, if you're dairy-free and missing all the cheesy goodness of normal mac n cheese, you've got to try the Earth Balance Vegan Mac n Cheese!
I'm not sure why I hadn't heard of the Earth Balance Mac n cheese until I got it for Christmas (yes really), but it's the only dairy-free one that I've tried that tastes similar to normal mac n cheese. Obviously it doesn't taste exactly the same. If I had to compare, I would say it's maybe a tiny bit more buttery (but still good) and kinda tastes like leftover mac n cheese. You know when it's been in the fridge and you re-heat it. It's like that but creamier. Maybe I just turned you off to it but seriously, if you're dairy-free try it. Then email me so I can give you my address for a thank you card. Hah just kidding (but no, really...).
Anyway, you can find it at Whole Foods (probably other places but thats the only place I've had luck) and it's around $2.50 a box. And worth every penny. Follow the instructions to a T with the milk (I used original almond) and butter (I happen to use earth balance because it's dairy free) and you'll be all set! It doesn't have that weird garlic and canned pea smell that all the other ones seem to have, it's orange, and really that alone should have you jumping in the car.
